Gluten Free....Why the Fuss...

Recently I discovered I am gluten sensitive. I am making a concerted effort to go back through my posted recipes and add in substitutions for those who might be gluten sensitive like me. The recipes will stay the same with the substitutions in Italics and in color.

I know there are other people who are like me and can't process grain and have a very unwanted reaction to it, like myself.  I want to be able to let them enjoy my recipes in their modified form. 

So with that said...Let the recipe transformation begin!

Elaine's Egg Nog..

Years ago I had a neighbor who was a riot!  Elaine!
She was a school teacher and had a great time teaching little minds.  How I have missed her and her charm over the years.  However Elaine left me her Egg Nog Recipe.  On a piece of worn paper and faded pencil scratches, I can barely make it out, but I will persevere and try to translate when the time comes in this little tale.

Over the holidays my youngest daughter and I traveled to Texas to visit her big sister and to give big sister my suburban as she is expecting her third child soon and needs a car with more room. Earlier in the year big sister told me of a wonderful blog called Pary Moppins.  A name take off on Mary Poppins. It's filled with wonderful hints and shortcuts on every day living and recipes.  Julie, the author of the blog is a lovely person and so informative.

Never in my wildest dreams did I think I would ever get to meet one of my favorite blog authors but New Years Day I did.  My daughter knows her and her family and we had an invite for festivities at her house. 

True to my word, I am putting up Elaine's Egg Nog for you Julie.

Elaine's Egg Nog Gluten-Free

12 eggs separated
1 Cup Sugar
1-2 Cups Rum, your preference on how much you like rum. 
1 qt. Milk
2 Cups Whipping Cream
Nutmeg
Big Punch Bowl

Separate eggs, leave egg whites and egg yolks out in separate bowls for 2 hours. Needs to be at room temperature. Beat egg yolks and sugar till thick and lemon yellow. Add rum, stirring well and place in refrigerator for 2 hours. Egg yolks are cold cooking. 
1 hour before serving beat egg whites into stiff peaks. Beat Whipping cream just past soft peaks.

Be careful to not over beat, we don't want butter.  Add milk into cooked egg yolks stirring well until combined. Add whipped cream into mixture folding gently then add egg whites, folding gently. Carefully pour into punch bowl. Sprinkle Nutmeg on top and serve.  
Note...If too concentrated for your taste, add a bit more milk one cup at a time.  I would do this before I add the egg whites and whipping cream. 

The one side effect of this Egg Nog is, everyone seems to go around with a white dot on their noses as they try so hard to get every last drop from their cup. 

This has a high alcohol content. Please don't drink and drive.
